A refreshing and fruity homemade rhubarb slush, perfect for hot summer days.

Ingredients

  • 2 cups rhubarb, chopped
  • 1 cup sugar
  • 2 cups water
  • 1 cup lemon juice
  • Ice cubes (for serving)

Instructions

  1. Combine rhubarb, sugar, and water in a saucepan and stir to dissolve the sugar.
  2. Bring to a boil and simmer until the rhubarb is soft, about 10 minutes.
  3. Remove from heat and cool completely.
  4. Strain the mixture to remove solids and stir in lemon juice.
  5. Freeze the liquid in a shallow container until solid, about 4-6 hours.
  6. Scrape the mixture with a fork to create a slushy texture.
  7. Serve in glasses with ice cubes and enjoy!

Notes

For best results, use fresh rhubarb and scrape well for a fluffy texture. Adjust sugar for desired sweetness.
