Ingredients

  • 4 large flour tortillas
  • 1 cup cooked rice
  • 1 can creamy beans (pinto or black)
  • 2 cups enchilada sauce
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Seasonings: salt, pepper, chili powder, cumin

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the ground beef over medium heat until browned and season with salt, pepper, chili powder, and cumin.
  3. Add the creamy beans and cooked rice, stirring to combine and simmering for a few minutes.
