Homemade Spanish Rice

A comforting and flavorful dish that is perfect as a side for any meal, bursting with spices and fresh ingredients.

  • 1 1/2 cups long-grain white rice
  • 2 tablespoons olive oil
  • 1/2 cup yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 cup tomato sauce
  • 1/2 cup diced tomatoes, drained
  • 2 1/2 cups chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon lime juice

Instructions

  1. Rinse the rice under cool water until the water runs mostly clear. Drain it very well.
  2. Toast the rice in olive oil over medium heat for about 4 to 5 minutes, stirring often until lightly golden.
  3. Sauté the diced onion for 2 to 3 minutes until softened, then add the minced garlic and cook for an additional 30 seconds.
  4. Combine the tomato sauce, diced tomatoes, cumin, chili powder, smoked paprika, salt, and black pepper, ensuring the rice is evenly coated.
  5. Add the chicken broth and bring to a gentle boil, then reduce heat to low and cover.
  6. Let it simmer for about 18 to 20 minutes, or until the rice is tender and liquid is absorbed.
  7. Rest the rice covered for about 5 minutes after turning off the heat.
  8. Finish by fluffing with a fork and stirring in cilantro and lime juice before serving.

Notes

For a spicier version, consider adding diced jalapeños or cayenne pepper. You can also use vegetable broth for a vegetarian option.
