A cozy, sweet, and buttery corn casserole that’s perfect for any occasion.

Ingredients

  • 2 cups corn (fresh or frozen)
  • 1 cup cream-style corn
  • 1/2 cup honey
  • 1/2 cup milk
  • 1/4 cup butter, melted
  • 2 large eggs
  • 1 cup cornbread mix
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the corn, cream-style corn, honey, milk, melted butter, and eggs in a large mixing bowl. Mix well.
  3. Stir in the cornbread mix, salt, and pepper until just combined.
  4. Pour the mixture into a greased baking dish.
  5. Bake for 45-50 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.
  6. Let it cool slightly before serving.

Notes

Letting the casserole cool helps it thicken up for easier slicing. Using fresh corn enhances the flavor, but frozen can be a good substitute.
