A warm, comforting dish featuring roasted butternut squash stuffed with a savory mix of chicken, walnuts, and cranberries, drizzled with honey.

Ingredients

  • 1 medium butternut squash
  • 2 cups cooked chicken, shredded
  • 1/4 cup honey
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon cinnamon
  • 1/4 cup chopped walnuts (optional)
  • 1/4 cup dried cranberries (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the butternut squash in half lengthwise and scoop out the seeds.
  3. Drizzle the insides of the squash with olive oil, honey, salt, pepper, and cinnamon.
  4. Place the squash halves cut-side up on a baking sheet and roast for about 30-40 minutes, or until tender.
  5. While the squash is roasting, mix the shredded chicken with walnuts and cranberries in a bowl.
  6. Once the squash is cooked, remove it from the oven and fill each half with the chicken mixture.
  7. Return to the oven and bake for an additional 10-15 minutes until everything is heated through.
  8. Serve warm and enjoy!

Notes

Don’t rush cooling the squash before handling. Add a sprinkle of nutmeg for a richer flavor if desired.
