A hearty and comforting Irish stew made with tender beef, fresh vegetables, and rich Guinness stout, perfect for chilly evenings.

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 bottle (12 oz) Guinness stout
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Brown the beef: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the beef and brown on all sides.
  2. Set aside: Once browned, remove the beef from the pot and set it aside.
  3. Sauté the vegetables: In the same pot, add the onion, carrots, and garlic. Cook until softened, about 5 minutes.
  4. Add flavor: Stir in the tomato paste and cook for another minute.
  5. Bring it all together: Return the beef to the pot and add the potatoes, beef broth, Guinness, Worcestershire sauce, thyme, bay leaf, salt, and pepper.
  6. Simmer away: Bring to a simmer, cover, and let it cook for about 120 minutes or until the beef is tender.
  7. Finish and garnish: Remove the bay leaf before serving. Garnish with fresh parsley.

Notes

This stew thickens more as it cools. It’s perfect for leftovers and tastes even better the next day.
