A delightful twist on traditional Italian focaccia with pockets filled with jam, perfect for a sweet breakfast or snack.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup warm water
  • 2 tablespoons sugar
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1/2 teaspoon salt
  • 3 tablespoons olive oil
  • 1/2 cup jam (strawberry or your choice)
  • Powdered sugar for dusting (optional)

Instructions

  1. Activate the yeast: In a bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.
  2. Mix the dough: In a large bowl, combine flour and salt. Add the yeast mixture and olive oil, mixing until a dough forms.
  3. Knead the dough: Lightly flour your surface and knead the dough for about 5 minutes until smooth and elastic.
  4. Let it rise: Place the dough in a greased bowl, cover with a kitchen towel, and let it rise for about 60 minutes or until doubled in size.
  5. Preheat the oven: Preheat your oven to 375°F (190°C) while waiting.
  6. Shape the focaccia: Punch down the risen dough and spread it onto a parchment-lined baking sheet, creating dimples for the jam.
  7. Add the jam: Spoon jam into each dimple, ensuring it’s evenly distributed.
  8. Bake: Bake for about 20-25 minutes until golden brown. Keep an eye on it during baking.
  9. Cool and dust: Allow to cool slightly and dust with powdered sugar before serving warm.

Notes

Feel free to experiment with different jam flavors and add toppings like cinnamon sugar for extra sweetness.
