A savory Korean twist on the classic pot roast featuring tender beef infused with soy sauce, brown sugar, and ginger.

Ingredients

  • 3 lbs beef chuck roast
  • 1 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup rice vinegar
  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 cups beef broth
  • 1/2 cup chopped green onions
  • 1 tablespoon sesame seeds
  • Salt and pepper to taste

Instructions

  1. Whisk together soy sauce, brown sugar, rice vinegar, sesame oil, garlic, and ginger in a bowl.
  2. Place the beef roast in a slow cooker and pour the marinade over it.
  3. Add the beef broth to the slow cooker and gently stir to combine.
  4. Cover and cook on low for 480-600 minutes, or until the meat is tender.
  5. Remove the roast and let it rest for a few minutes before slicing.
  6. Serve with the sauce poured over and garnish with green onions and sesame seeds.

Notes

For the best texture, let the meat rest before slicing. Stir the sauce occasionally during cooking.
