  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1/2 cup milk
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons fresh lemon juice (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease your loaf pan.
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Incorporate the fresh lemon juice and zest into the mixture.
  5. Mix the flour, baking powder, and salt in another bowl.
  6. Combine the dry ingredients with the wet mixture, alternating with the milk.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes, or until a toothpick comes out clean.
  9. Whisk together the powdered sugar and lemon juice for the glaze while the loaf is baking.
  10. Cool the loaf in the pan for 10 minutes before transferring it to a wire rack.
  11. Drizzle the glaze over the cooled loaf before serving.

Notes

Make sure your eggs and butter are at room temperature for better blending. Let the loaf cool completely before glazing.
