A delightful bread combining tart rhubarb and zesty lemon, perfect for cozy mornings or as a special treat.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 cup rhubarb, chopped
  • Zest of 1 lemon
  • 1/4 cup lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Whisk together the flour, baking powder, baking soda, and salt in a bowl. Set aside.
  3. Cream the softened butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla.
  5. Mix in the buttermilk gradually.
  6. Add the dry ingredients to the wet ingredients and mix until just combined.
  7. Fold in the rhubarb, lemon zest, and lemon juice.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 60-70 minutes, or until a toothpick comes out clean.
  10. Let it cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes

Use fresh rhubarb for the best flavor. Don’t skip greasing the pan to prevent sticking.
