A hearty and satisfying Loaded Potato Taco Bowl featuring roasted potatoes, seasoned meat, and fresh toppings, perfect for cozy nights or meal prepping.

  • 3 large russet potatoes, diced
  • 1 pound ground beef or chicken
  • 1 tablespoon olive oil
  • 1 packet taco seasoning
  • 1 cup shredded cheese (cheddar works great)
  • 1 cup sour cream
  • 1 cup diced tomatoes (fresh or canned)
  • 1 cup shredded lettuce
  • 1 avocado, sliced
  • Fresh cilantro, for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss the diced potatoes with olive oil and a hefty pinch of salt. Spread on a baking sheet and roast for about 25-30 minutes until golden and crispy.
  3. Cook the ground meat in a skillet over medium heat until browned, about 6-8 minutes. Drain excess fat, add taco seasoning, and stir well.
  4. Assemble the bowls by layering crispy potatoes, seasoned meat, cheese, diced tomatoes, lettuce, and avocado. Top with a dollop of sour cream.
  5. Sprinkle fresh cilantro on top and serve immediately.

Notes

For best results, do not rush the roasting of the potatoes. Feel free to experiment with different toppings.
