Ingredients

  • 8 oz. cooked shrimp, peeled and deveined
  • 4 cups mixed greens (like spinach, arugula, or romaine)
  • 1/2 cup cherry tomatoes, halved
  • 1/2 avocado, diced
  • 1/4 cup red onion, sliced
  • 2 hard-boiled eggs, chopped
  • 1/4 cup crumbled feta cheese
  • 1/4 cup cooked bacon, crumbled
  • Olive oil
  • Lemon juice
  • Salt and pepper to taste

Instructions

  1. Combine mixed greens, cherry tomatoes, avocado, red onion, hard-boiled eggs, feta cheese, and bacon in a large bowl.
  2. Add the cooked shrimp on top.
  3. Drizzle with olive oil and lemon juice, and season with salt and pepper.
  4. Toss gently to combine and serve immediately.
