Ingredients

  • 4 slices bacon, cooked and crumbled
  • 2 cups mixed greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1 avocado, diced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Combine the shrimp, crumbled bacon, mixed greens, cherry tomatoes, red onion, and diced avocado in a large bowl.
  2. Make the dressing by whisking together the olive oil, lemon juice, salt, and pepper in a smaller bowl.
  3. Dress the salad with the dressing and gently toss everything to combine, being careful not to mush the avocado.
  4. Serve immediately for the best flavor, keeping dressing separate if not serving right away.
