A vibrant and refreshing salad featuring cauliflower, colorful veggies, and a tangy dressing, perfect for any occasion.

Ingredients

  • 1 head cauliflower, cut into florets
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 red onion, thinly sliced
  • 1/2 cup olives, pitted and sliced
  • 2 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Combine the vegetables: In a large bowl, toss the cauliflower florets, cherry tomatoes, cucumber, bell pepper, red onion, and olives.
  2. Prepare the dressing: In a small bowl, whisk together the olive oil, red wine vinegar, oregano, and a pinch of salt and pepper.
  3. Dress the salad: Pour the dressing over the salad and toss everything gently to coat.
  4. Let it marinate: Cover the bowl and pop it in the refrigerator for at least 30 minutes.
  5. Garnish and enjoy: Just before serving, sprinkle some fresh parsley on top and serve chilled.
