A refreshing Mediterranean salad bursting with flavors from fresh cucumbers, juicy cherry tomatoes, tangy feta, and a zesty lemon dressing.

Ingredients

  • 4 Persian cucumbers, chopped
  • 2 cups cherry tomatoes, halved
  • 1/2 small red onion, finely diced or thinly sliced
  • 3/4 cup Castelvetrano green olives, whole or halved
  • 5 to 6 ounces of feta cheese, cut into small cubes
  • Lemon dressing (to taste)

Instructions

  1. Combine the chopped Persian cucumbers, halved cherry tomatoes, diced red onion, and olives in a large bowl.
  2. Fold in the feta cheese gently to keep the cubes intact.
  3. Drizzle with lemon dressing and toss everything to combine.
  4. Serve immediately or refrigerate for 30 minutes to let the flavors mingle.
