- 1 head cauliflower
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 tablespoon red wine vinegar
- 2 cloves garlic minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cherry tomatoes halved
- 1 cup cucumber diced
- 1/4 cup red onion thinly sliced
- 1/3 cup kalamata olives pitted and halved
- 1/4 cup fresh parsley chopped
- 2 ounces feta cheese crumbled
- Preheat the oven to 425°F (220°C).
- In a large bowl, combine olive oil, lemon juice, red wine vinegar, minced garlic, dried oregano, salt, and black pepper.
- Add cauliflower florets to the bowl and toss until evenly coated in the marinade.
- Spread the cauliflower on a baking sheet in a single layer and roast for 20 to 25 minutes until tender and golden.
- Remove from the oven and let the cauliflower cool to room temperature.
- In a large salad bowl, combine the roasted cauliflower, cherry tomatoes, cucumber, red onion, olives, and parsley.
- Gently fold in the crumbled feta cheese.
- Cover and chill the salad in the refrigerator for at least 1 hour to allow the flavors to meld.
- Serve chilled or at room temperature.

- For extra flavor, feel free to add other vegetables like bell peppers or avocado.
- Make it vegan by omitting feta cheese or using a vegan alternative.
