A delicious and refreshing salad featuring roasted cauliflower marinated with Mediterranean flavors.

Ingredients

  • 1 head cauliflower
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon red wine vinegar
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/4 cup red onion thinly sliced
  • 1/3 cup kalamata olives pitted and halved
  • 1/4 cup fresh parsley chopped
  • 2 ounces feta cheese crumbled

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine olive oil, lemon juice, red wine vinegar, minced garlic, dried oregano, salt, and black pepper.
  3. Add cauliflower florets to the bowl and toss until evenly coated in the marinade.
  4. Spread the cauliflower on a baking sheet in a single layer and roast for 20 to 25 minutes until tender and golden.
  5. Remove from the oven and let the cauliflower cool to room temperature.
  6. In a large salad bowl, combine the roasted cauliflower, cherry tomatoes, cucumber, red onion, olives, and parsley.
  7. Gently fold in the crumbled feta cheese.
  8. Cover and chill the salad in the refrigerator for at least 1 hour to allow the flavors to meld.
  9. Serve chilled or at room temperature.

Notes

  • For extra flavor, feel free to add other vegetables like bell peppers or avocado.
  • Make it vegan by omitting feta cheese or using a vegan alternative.
  • This salad can be prepared a day in advance for parties or meal prep.
