Warm and cheesy Mexican Tater Tot Casserole, perfect for family gatherings and picky eaters.

  • 1 pound ground beef
  • 1 can black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 4 cups tater tots
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 packet taco seasoning
  • Sour cream (for serving)
  • Green onions (for serving)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the ground beef in a skillet over medium heat until browned, draining any excess fat.
  3. Add taco seasoning, black beans, and corn to the skillet, mixing well.
  4. Layer the beef mixture in a greased baking dish and top with tater tots.
  5. Sprinkle shredded cheese on top of the tater tots.
  6. Bake for 25-30 minutes, or until tater tots are golden brown and cheese is bubbling.
  7. Serve with sour cream and green onions.

Notes

For best results, do not skip browning the beef thoroughly. Feel free to add extra veggies or toppings.
