  • 4 large egg yolks
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/4 cup corn syrup

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the dry ingredients: In a mixing bowl, combine oats, flour, brown sugar, granulated sugar, and salt. Stir in the melted butter until it blends well.
  3. Create the crust: Press the oat mixture into the bottom of a pie dish to form the crust. Bake for about 15-20 minutes, or until it’s lightly golden.
  4. Whisk the filling: In another bowl, whisk together the egg yolks, heavy cream, vanilla extract, and corn syrup until everything is smooth and creamy.
  5. Combine and bake: Pour the filling into the baked crust. Bake for an additional 25-30 minutes until the filling is set and the top is golden brown.
  6. Cool down: Let the pie cool before slicing into it to improve texture and flavors.
