Quick and rich sandwich cookies made with buttery shortbread, dulce de leche, and melted chocolate.

Ingredients

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 cup dulce de leche or caramel sauce
  • 1 cup chocolate chips or melting chocolate
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Add the flour, salt, and vanilla extract to the butter mixture, and mix until a dough forms.
  4. Press the dough into a greased 9×13 inch baking pan evenly.
  5. Bake for 20-25 minutes, until lightly golden. Remove from oven and let cool completely.
  6. Spread a generous layer of dulce de leche or caramel sauce over half of the shortbread.
  7. Melt the chocolate chips in the microwave or double boiler, and then spread over the caramel layer.
  8. Top with the remaining shortbread, pressing down gently.
  9. Chill in the refrigerator for at least 30 minutes to set before slicing into squares or bars. Enjoy!

Notes

Chilling is essential for clean slices. Use a hot, dry knife for best results.
