  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 cup neutral oil (like vegetable or canola)
  • 4 large eggs
  • 1 cup buttermilk
  • 2 teaspoons vanilla extract
  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 1 tablespoon orange zest, optional
  • 1/2 cup chopped pecans or walnuts, optional

Instructions

  1. Preheat your oven to 350°F (175°C) and grease the cake pans with parchment paper.
  2. Whisk together the flour, baking powder, baking soda, salt, and spices in a medium bowl.
  3. Combine brown sugar, granulated sugar, oil, eggs, buttermilk, and vanilla in a large bowl; whisk until smooth.
  4. Gently mix in the dry ingredients until just combined.
  5. Divide the batter into prepared cake pans and smooth tops.
  6. Bake for 28 to 34 minutes; check doneness with a toothpick.
  7. Cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
  8. Beat cream cheese and butter in a large bowl until smooth, then gradually add powdered sugar, vanilla, and salt.
  9. Frost the cooled cakes, stacking one on top of the other, and decorate with nuts or zest if desired.

Notes

Use room temperature ingredients for a smoother batter. Chilling the frosted cake will help with cleaner slices.
