Delightful no bake mini cheesecakes with a buttery graham cracker crust and creamy filling, perfect for the holiday season.

  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • Holiday toppings (crushed candy canes, sprinkles, or berries)

Instructions

  1. Make the crust: In a bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir well to avoid any dry crumbs. Then, press the mixture into the bottoms of mini cupcake liners to form the crust.
  2. Beat the cheesecake filling: In another bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until it’s silky smooth.
  3. Whip the cream: In a separate bowl, whip the heavy cream until stiff peaks form. Fold the whipped cream into the cream cheese mixture gently.
  4. Fill the cups: Spoon the cheesecake filling over the crust in the mini cupcake liners.
  5. Chill out: Refrigerate for at least 120 minutes to set.
  6. Top it off: Before serving, add your holiday toppings.
