A vibrant and flavorful dish that combines succulent shrimp, vegetables, and spices in a single pot, perfect for weeknight dinners.

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 cup chicken broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon hot sauce (adjust to taste)
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • 2 cups cooked rice
  • 2 green onions, sliced (for garnish)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large pot over medium heat until shimmering.
  2. Sauté the chopped onion, bell pepper, celery, and garlic until softened, about 5 minutes.
  3. Add the diced tomatoes, chicken broth, Worcestershire sauce, hot sauce, oregano, paprika, cayenne, salt, and pepper; bring to a gentle simmer.
  4. Stir in the shrimp and cook for 2-3 minutes until they turn pink and are cooked through.
  5. Incorporate the pre-cooked rice and stir until well combined and heated through.
  6. Serve hot, garnished with sliced green onions and parsley.

Notes

Taste before serving; adjust seasonings as needed. This dish can also be made ahead and reheated.
