A flavorful one-pot dish featuring ground turkey, rice, and vegetables, perfect for a hearty and comforting meal without the hassle of multiple dishes.

Ingredients

  • 1 pound ground turkey
  • 1 cup rice (white or brown)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 cup frozen peas and carrots
  • 2 tablespoons olive oil
  • Fresh herbs (like parsley or thyme) for garnish

Instructions

  1. Heat 2 tablespoons of olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, stirring often until the onion is translucent, about 3 minutes.
  3. Throw in the ground turkey and cook until browned, about 5-7 minutes.
  4. Stir in the rice, chicken broth, salt, pepper, and paprika. Give it a good mix!
  5. Bring to a boil, then reduce heat to low, cover, and let it simmer for 20-25 minutes until the rice is tender.
  6. Add the frozen peas and carrots, stir well, cover, and let sit for another 5 minutes.
  7. Fluff with a fork and garnish with fresh herbs before serving.

Notes

Make sure to check the rice; if it remains undercooked, you can add a little more broth and cook for a few extra minutes.
