A delicious one-skillet meal combining honey BBQ chicken with rice, ready in just 40 minutes.

Ingredients

  • 2 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 1/2 lbs boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • Salt and pepper, to taste
  • 1 cup long-grain white rice, rinsed
  • 1 cup chicken broth
  • 1/2 cup barbecue sauce
  • 1/4 cup honey
  • 1/2 cup frozen corn kernels (optional)
  • 1/2 cup shredded cheddar cheese (optional)
  • Fresh parsley or green onions, chopped, for garnish

Instructions

  1. Season chicken pieces with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
  2. In the same skillet, add onion and garlic. Sauté until fragrant and translucent, about 3 minutes.
  3. Stir in rinsed rice and cook for 1-2 minutes to lightly toast.
  4. Add chicken broth, barbecue sauce, and honey to the skillet. Stir to combine. Bring to a simmer.
  5. Return chicken to the skillet. Cover and reduce heat to low. Cook for 15-18 minutes, or until rice is tender and liquid is absorbed. Stir occasionally to prevent sticking.
  6. If using, sprinkle shredded cheddar cheese on top, cover again, and let cheese melt for 2-3 minutes.
  7. Garnish with chopped parsley or green onions before serving.

Notes

  • Feel free to add other vegetables if desired.
  • This dish can be customized with different types of cheese.
  • Store leftovers in an airtight container in the refrigerator.
