2 tbsp olive oil
1 small onion, diced
3 cloves garlic, minced
1 1/2 lbs boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
Salt and pepper, to taste
1 cup long-grain white rice, rinsed
1 cup chicken broth
1/2 cup barbecue sauce
1/4 cup honey
1/2 cup frozen corn kernels (optional)
1/2 cup shredded cheddar cheese (optional)
Fresh parsley or green onions, chopped, for garnish
Instructions
Season chicken pieces with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
In the same skillet, add onion and garlic. Sauté until fragrant and translucent, about 3 minutes.
Stir in rinsed rice and cook for 1-2 minutes to lightly toast.
Add chicken broth, barbecue sauce, and honey to the skillet. Stir to combine. Bring to a simmer.
Return chicken to the skillet. Cover and reduce heat to low. Cook for 15-18 minutes, or until rice is tender and liquid is absorbed. Stir occasionally to prevent sticking.
If using, sprinkle shredded cheddar cheese on top, cover again, and let cheese melt for 2-3 minutes.
Garnish with chopped parsley or green onions before serving.
Notes
Feel free to add other vegetables if desired.
This dish can be customized with different types of cheese.
Store leftovers in an airtight container in the refrigerator.
