  • 1 tsp baking soda
  • 1 tsp ground ginger
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • Pinch of salt
  • ½ cup unsalted butter (melted)
  • ¾ cup raw honey
  • 2 large eggs
  • 1 cup fresh orange juice
  • Zest of 2 oranges
  • 1 tbsp grated fresh ginger
  • Optional Glaze: 2 tbsp honey
  • Optional Glaze: 2 tbsp orange juice

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your baking pan.
  2. Whisk together dry ingredients: flour, baking soda, ground ginger, cinnamon, nutmeg, and salt.
  3. Combine the wet ingredients: melted butter, honey, and eggs.
  4. Stir in the fresh orange juice, zest, and grated ginger.
  5. Fold the dry ingredients into the wet mixture until just combined. Avoid overmixing.
  6. Pour the batter into the prepared pan and bake for about 40–45 minutes.
  7. Brush the warm cake with the optional honey-orange glaze.
  8. Cool for 10 minutes in the pan, then transfer to a wire rack to cool completely.
