A refreshing and vibrant cocktail that combines the tropical flavors of passionfruit with the sweetness of raspberry and the smoothness of tequila.

Ingredients

  • 2 oz silver or blanco tequila
  • 1 oz passionfruit juice
  • 1 oz raspberry syrup
  • 3/4 oz freshly squeezed lime juice
  • 1/2 oz simple syrup, optional
  • 1 egg white or 1 oz aquafaba
  • Ice
  • Fresh raspberries, for garnish
  • Lime wedge or lime zest, for garnish

Instructions

  1. If making homemade raspberry syrup, simmer equal parts raspberries, sugar, and water until slightly thickened. Strain and let it cool before using.
  2. Add the tequila, passionfruit juice, raspberry syrup, lime juice, optional simple syrup, and egg white or aquafaba to a cocktail shaker.
  3. Shake vigorously without ice for 15 to 20 seconds to create a smooth, frothy foam.
  4. Add ice to the shaker and shake again for another 15 to 20 seconds until the cocktail is well chilled.
  5. Double-strain into a chilled coupe or martini glass for a silky-smooth texture.
  6. Garnish with fresh raspberries, a lime wedge, or a little grated lime zest.
  7. Serve immediately and enjoy.
