A delightful twist on the classic Caprese salad featuring grilled eggplant, mozzarella, tomatoes, and fresh basil.

  • 1 large eggplant
  • 2 cups fresh mozzarella cheese, sliced
  • 2 large tomatoes, sliced
  • 1 cup fresh basil leaves
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat your grill or oven to 400°F (200°C).
  2. Slice the eggplant into rounds, about ½ inch thick, and brush both sides with olive oil.
  3. Place the eggplant on the grill or a baking sheet and cook for about 5-7 minutes on each side until golden and tender.
  4. Layer the grilled eggplant slices, mozzarella cheese, and sliced tomatoes on a serving platter.
  5. Tuck fresh basil leaves between the layers for added flavor.
  6. Drizzle with the remaining olive oil and balsamic vinegar.
  7. Season with salt and pepper to taste.
