A moist and sweet zucchini bread that is spiced with cinnamon and nutmeg, perfect for breakfast or as a snack.

Ingredients

  • 2 cups grated zucchini (about 2 medium zucchinis)
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix together the grated zucchini, sugar, oil, eggs, and vanilla extract until well combined.
  3. In another bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. Gradually add the dry ingredients to the wet mixture. Stir gently, just until combined. Don’t rush this step!
  5. If you’re using nuts, fold them in now.
  6. Pour the batter into your greased loaf pan and smooth the top.
  7. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  8. Let cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

Grate your zucchini just before using for optimal moisture and freshness.
