A refreshing and zesty Pineapple Cucumber Salad perfect for summer meals or as a side dish.

Ingredients

  • 1 ripe pineapple, diced
  • 1 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the diced pineapple, cucumber, and red onion.
  2. Add the chopped cilantro and lime juice.
  3. Toss everything together until well mixed. Make sure it’s evenly coated.
  4. Season with salt and pepper to taste.
  5. Chill in the refrigerator for at least 30 minutes before serving.
