1 cup milk (dairy, almond, oat, soy, or your favorite milk)
1 to 2 shots espresso or strong brewed coffee
2 tablespoons pumpkin puree
1 tablespoon sugar, or sweetener to taste
1/4 teaspoon pumpkin pie spice
1/2 teaspoon vanilla extract
Whipped cream, optional for topping
Extra pumpkin pie spice or cinnamon, for garnish
Instructions
In a small saucepan over medium heat, combine the milk, pumpkin puree, sugar, and pumpkin pie spice. Whisk continuously until the mixture is smooth, creamy, and hot, but do not let it boil.
Remove the saucepan from the heat and stir in the vanilla extract. Whisk vigorously or use a handheld frother to create a light, foamy texture.
Pour the freshly brewed espresso into your favorite mug, then slowly add the warm pumpkin milk mixture.
Top with whipped cream if desired, then finish with a light sprinkle of pumpkin pie spice or cinnamon for a cozy café-style finish.
For an iced version, let the pumpkin milk mixture cool slightly. Fill a glass with ice, pour in the espresso, add the pumpkin mixture, stir gently, then top with whipped cream and a sprinkle of pumpkin pie spice if desired.
Notes
Adjust the sweetness to your preference by changing the amount of sugar or sweetener.
For a stronger coffee flavor, use 2 shots of espresso.
