A fresh and vibrant salad featuring tender shrimp, crunchy veggies, and a tangy balsamic vinaigrette, perfect for quick meals and gatherings.

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 4 cups mixed greens (baby spinach, arugula, or whichever is available)
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1/2 cup balsamic vinaigrette
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat the skillet over medium heat and add a splash of olive oil.
  2. Sauté the shrimp. Season them with salt and pepper. Cook until they turn pink, about 2-3 minutes on each side.
  3. Combine your veggies in the large bowl: mixed greens, halved cherry tomatoes, cucumber, and red onion.
  4. Add the cooked shrimp to the salad.
  5. Drizzle with balsamic vinaigrette and toss gently.
  6. Serve immediately. Enjoy fresh!

Notes
