A comforting and quick skillet meal featuring kielbasa, broccoli, and melted cheddar cheese—perfect for busy weeknights.

  • 1 pound kielbasa, sliced
  • 1 cup uncooked rice
  • 2 cups broccoli florets (fresh or frozen)
  • 1 cup shredded cheddar cheese
  • 2 cups chicken broth
  • 1/2 cup milk
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in your large skillet over medium heat. It should shimmer a little.
  2. Add the sliced kielbasa and cook, stirring occasionally, until it’s browned—this will take about 4-5 minutes.
  3. Remove the kielbasa from the skillet and set it aside.
  4. In the same skillet, add the chicken broth, uncooked rice, garlic powder, salt, and pepper. Bring this to a boil.
  5. Reduce the heat to low, cover the skillet, and let it simmer for about 15 minutes or until the liquid is absorbed and the rice is tender.
  6. Stir in the broccoli florets and cook for an additional 5-7 minutes until the broccoli is bright green and tender.
  7. Return the cooked kielbasa to the skillet, pour in the milk, and sprinkle the shredded cheddar cheese on top.
  8. Stir everything together until that cheese melts into gooey perfection.
  9. Serve hot and enjoy!
