Ingredients

  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Juice from 1 lemon
  • 1 cup plain yogurt
  • Handful of fresh parsley, chopped
  • Handful of fresh mint, chopped
  • Salt and pepper to taste
  • Pita bread for serving
  • Rice or salad
  • Favorite roasted vegetables (zucchini, bell peppers, etc.)

Instructions

  1. Marinate the Chicken: Cut chicken into chunks, mix olive oil, minced garlic, lemon juice, salt, and pepper. Toss chicken in marinade and let it sit for at least 30 minutes.
  2. Grill the Chicken: Thread marinated chicken onto skewers and grill over medium-high heat for 10-15 minutes, turning occasionally.
  3. Make the Yogurt Sauce: Mix yogurt with minced garlic, chopped herbs, and a pinch of salt in a bowl.
  4. Serve It Up: Serve grilled chicken with warm pita bread, side of rice or salad, and roasted veggies. Drizzle with yogurt sauce.
