Deliciously fluffy cruffins filled with creamy cheese and fresh raspberries, perfect for brunch or dessert.

Ingredients

  • 1 package of puff pastry
  • 1 cup of fresh raspberries
  • 1/2 cup of cream cheese
  • 1/4 cup of powdered sugar
  • 1 teaspoon of vanilla extract
  • 1 egg (for an egg wash)
  • Butter (for greasing and brushing)
  • Optional toppings: powdered sugar or additional raspberries

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Grease a muffin tin with butter.
  3. Roll out the puff pastry on a lightly floured surface and cut it into 2-inch wide strips.
  4. Mix the cream cheese, powdered sugar, and vanilla extract until smooth.
  5. Spread the filling across each pastry strip and add raspberries on top.
  6. Roll up each pastry strip and place them upright in the muffin tin.
  7. Brush with beaten egg and sprinkle sugar on top if desired.
  8. Bake for 20-25 minutes until golden brown.
  9. Cool slightly before serving.

Notes

For a more intense raspberry flavor, consider mixing in raspberry jam with the cream cheese.
