Delicious Rhubarb Shortbread Bars featuring a buttery shortbread crust and tart rhubarb filling, perfect for any occasion.

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 2 cups rhubarb, chopped
  • 1 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 egg

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the butter and powdered sugar until smooth.
  3. Gradually blend in the flour and salt.
  4. Press the mixture into the bottom of a greased 9×13-inch baking dish.
  5. Prepare the rhubarb filling by mixing rhubarb, granulated sugar, cornstarch, vanilla extract, and egg.
  6. Pour the rhubarb mixture over the shortbread crust.
  7. Bake for 30-35 minutes or until set and lightly golden.
  8. Allow to cool before slicing into bars.

Notes

Use fresh rhubarb for the best flavor. Chill the bars in the fridge after they cool to help them firm up.
