  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup cashews, whole or halved
  • 2 cups mixed vegetables (bell peppers, broccoli, and snap peas)
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Cooked rice or quinoa (for serving)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine chicken pieces, cashews, mixed vegetables, soy sauce, honey, olive oil, garlic powder, salt, and pepper in a large bowl.
  3. Spread the mixture evenly on a large sheet pan.
  4. Bake for 20-25 minutes or until chicken is cooked through and vegetables are tender.
  5. Serve over cooked rice or quinoa.
