A comforting and satisfying casserole combining tender shrimp, rich mushrooms, and creamy cheese, perfect for quick meals or special occasions.

  • 1 lb shrimp, peeled and deveined
  • 8 oz mushrooms, sliced
  • 1 cup cream of mushroom soup
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 cups cooked rice or pasta
  • 1/2 cup milk
  • 1/2 onion, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Heat olive oil in a large skillet over medium heat. Add onions and mushrooms, sauté until soft, about 5 minutes.
  3. Add shrimp to the skillet and cook until pink and cooked through, about 3-4 minutes.
  4. Combine cream of mushroom soup, milk, cheese, salt, pepper, garlic powder, and thyme in a large bowl. Mix well.
  5. Stir in the cooked rice or pasta and shrimp mixture until combined.
  6. Transfer to a greased casserole dish and bake for 25-30 minutes or until bubbly and golden on top.

Notes

Let the casserole cool for a few minutes before serving. For crispy topping, sprinkle more cheese on top before baking. Can be prepared ahead of time.
