1–1 1/2 pounds chicken tenderloins cut into bite-size pieces
1/3 cup cornstarch
3 eggs
1 cup vegetable oil for frying
18 ounce BBQ sauce (bottle of your favorite)
1 cup pineapple juice
1/3 cup brown sugar
Green onions or scallions for garnish, optional
Instructions
In a mixing bowl combine your eggs and cornstarch.
Coat your chicken pieces in the cornstarch egg mixture.
Heat up the oil in a large skillet over medium-high heat.
Brown the chicken quickly in the pan. We are not looking to cook the chicken through, just get a little color on each side.
Place the browned chicken in the slow cooker.
In a mixing bowl combine BBQ sauce, pineapple juice, and brown sugar.
Pour the sauce over the chicken. Stir everything to combine.
Cover and cook on LOW for 3-4 hours. Check and stir halfway through. Slow cookers cook differently so make sure to stir and ensure your slow cooker isn’t running too hot and burning the sauce.
Garnish with scallions and serve over rice.
Notes
Make sure the chicken is not overcrowded in the skillet for even browning.
You can adjust the sweetness by adding more or less brown sugar.
