Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large egg whites
  • 1/2 teaspoon vanilla extract
  • 1/4 cup milk
  • 1 cup powdered sugar (for frosting)
  • 1/4 cup unsalted butter, softened (for frosting)
  • 1/2 teaspoon vanilla extract (for frosting)
  • 12 tablespoons milk (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with 6 paper liners.
  2. Combine the flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Give it a good stir!
  3. Add the softened butter to the dry ingredients. Mix until it’s all combined.
  4. Whisk the egg whites, vanilla, and milk together in a separate bowl.
  5. Gradually pour the wet ingredients into the dry ingredients, mixing until you have a smooth batter.
  6. Divide the batter evenly among the cupcake liners.
  7. Bake for 15-18 minutes or until a toothpick comes out clean.
  8. Let the cupcakes cool completely before frosting.
  9. Beat the softened butter, powdered sugar, vanilla, and milk together for the frosting until creamy.
  10. Frost the cooled cupcakes as desired, then enjoy!

Notes

Stir the batter gently to avoid over-mixing. Frosting hot cupcakes leads to a melty mess; let them cool completely.
