Indulge in this rich and delicious Smores Cake, combining chocolate cake, graham cracker crust, and fluffy marshmallow frosting.

  • Chocolate Cake
  • 2 cups all-purpose flour
  • ¾ cup unsweetened natural cocoa powder
  • 2 teaspoons baking soda
  • 1 ½ teaspoons salt
  • 1 teaspoon baking powder
  • 2 ¼ cups granulated sugar
  • 2 large eggs
  • 1 cup + 2 tablespoons buttermilk
  • 1 cup vegetable or canola oil
  • 1 teaspoon vanilla extract
  • 1 cup hot water
  • Graham Cracker Crust:
  • 3 cups crushed graham crackers
  • ⅓ cup granulated sugar
  • ⅓ cup light brown sugar, packed
  • 2 ½ unsalted butter, melted
  • Assembly:
  • 1 recipe Marshmallow Buttercream
  • ¾ cup marshmallow fluff or creme
  • ¼ cup crushed graham crackers
  • Homemade marshmallows, about 12
  • Hershey’s mini chocolate bars, to taste

Instructions

  1. Preheat the oven to 350 F and prepare three 8-inch round cake pans.
  2. Mix the dry ingredients for the chocolate cake.
  3. Whisk the sugar and eggs until combined, then add wet ingredients.
  4. Mix the dry ingredients with the wet mixture and add hot water.
  5. Divide the batter into pans and bake for 13-16 minutes.
  6. Allow cakes to cool for 20-30 minutes.
  7. Prepare the graham cracker crust in another bowl and press into the cake pans.
  8. Freeze the graham cracker crust for at least 20 minutes.
  9. Assemble the cake by layering the graham crust, cake, and frosting.
  10. Create a crumb coat and refrigerate for 20 minutes.
  11. Frost the cake with the remaining marshmallow buttercream.
  12. Decorate the top with marshmallows and chocolate bars.

Notes

  • A cake tester should come out with moist crumbs when testing doneness.
  • Homemade marshmallows can be made in advance.
  • Store bought ingredients can be used for convenience.
