Delicate and airy Snowflake Macarons with a creamy white chocolate ganache filling, perfect for any occasion.

Ingredients

  • 1 cup almond flour
  • 1 3/4 cups powdered sugar
  • 3 large egg whites
  • 1/4 cup granulated sugar
  • 1/4 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • 1/2 cup white chocolate, chopped
  • 1/4 cup heavy cream

Instructions

  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Sift together the almond flour and powdered sugar in a bowl.
  3. Beat the egg whites in another bowl until frothy, then gradually add the granulated sugar and cream of tartar, beating until stiff peaks form.
  4. Fold the dry mixture into the whipped egg whites gently.
  5. Transfer the mixture to a piping bag and pipe small rounds onto the prepared baking sheet.
  6. Let the macarons sit at room temperature for about 30 minutes, until a skin forms on the surface.
  7. Bake for 15-20 minutes until they lift easily from the parchment.
  8. Heat the heavy cream until just boiling, then pour it over the chopped white chocolate. Let it sit for a minute, then stir until smooth.
  9. Allow the ganache to cool and thicken before spreading between two macaron shells.
  10. Assemble the macarons and refrigerate for at least an hour before serving.
