  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
  • 1 (8 oz) package cream cheese, softened
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup fresh strawberries, pureed
  • 1 tablespoon cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. Combine the graham cracker crumbs, melted butter, and sugar in a bowl; press into the bottom of the prepared dish.
  3. Beat the cream cheese with sugar and vanilla until smooth.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Pour the cheesecake mixture over the crust in the baking dish.
  6. Mix the pureed strawberries with cornstarch and swirl into the cheesecake batter.
  7. Bake for 25-30 minutes or until set.
  8. Allow to cool, then refrigerate for at least 4 hours before serving.
