A comforting and flavorful Sorrento-style Pasta dish, topped with gooey mozzarella and delicious tomato sauce.

Ingredients

  • 300g pasta (penne or rigatoni)
  • 400g canned tomatoes (crushed)
  • 200g mozzarella cheese (cubed)
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • Salt and pepper to taste
  • Fresh basil leaves (for garnish)
  • Parmesan cheese (for serving)

Instructions

  1. Cook the pasta: Fill a large pot with salted water and bring it to a boil. Add the pasta and cook according to package instructions until al dente. Stir often so it doesn’t stick, about 8-10 minutes.
  2. Prepare the sauce: While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Toss in the minced garlic and sauté until fragrant, about 1-2 minutes.
  3. Add tomatoes: Pour in the crushed tomatoes and bring the mixture to a gentle simmer. Season with salt and pepper to taste and let simmer for about 5 minutes.
  4. Combine with the pasta: Drain the pasta and add it to the skillet with the sauce. Stir in half of the mozzarella and mix well.
  5. Bake: Transfer the pasta mixture to a baking dish and top with the remaining mozzarella. Bake in a preheated oven at 180°C (350°F) for about 20 minutes or until the cheese is melted and bubbly.
  6. Garnish and serve: Remove from the oven and garnish with fresh basil leaves. Serve hot, with grated Parmesan cheese on top.
