1 lb medium shrimp, peeled and deveined
1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 bell pepper, diced
1 medium carrot, peeled and sliced
1 can (14 oz) diced tomatoes
3 cups low-sodium chicken broth
1 teaspoon chili powder
½ teaspoon smoked paprika
½ teaspoon cayenne pepper (adjust to taste)
1 teaspoon ground cumin
1 tablespoon fresh lime juice
2 tablespoons fresh cilantro, chopped (optional)
Salt and pepper to taste
Instructions
Chop the onion, garlic, bell pepper, and carrot. Set aside.
If you haven’t already, peel and devein the shrimp. Set aside.
In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook for 2-3 minutes until softened and fragrant.
Stir in the garlic, bell pepper, and carrot. Cook for another 3-4 minutes until the vegetables begin to soften.
Pour in the diced tomatoes (with juices) and chicken broth. Stir to combine. Bring the mixture to a simmer over medium-high heat.
Add chili powder, smoked paprika, cayenne pepper, ground cumin, salt, and pepper to the pot. Stir well and let the soup simmer for 5-6 minutes to allow the flavors to meld together.
Carefully add the shrimp to the pot, stirring them into the soup. Cook for 3-4 minutes, or until the shrimp turn pink and opaque. Be careful not to overcook the shrimp.
Stir in the fresh lime juice to brighten the flavor.
Taste the soup and adjust the seasoning, adding more salt, pepper, or cayenne pepper if needed.
Ladle the soup into bowls and garnish with fresh chopped cilantro and additional lime wedges, if desired.
Notes
Adjust the level of cayenne pepper to control the spice level according to your preference.
Fresh lime juice enhances the flavor significantly; do not skip it.
