Scale
  • 1 lb steak (sirloin or your choice)
  • 2 large sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup cooked quinoa or brown rice
  • 1 avocado, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1 lime, juiced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup Greek yogurt or sour cream (for crema)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the cubed sweet potatoes in olive oil, salt, and pepper, then spread on a baking sheet.
  3. Roast for about 25-30 minutes until tender and slightly caramelized.
  4. Season the steak with salt and pepper, then sear in a skillet over medium-high heat for 4-5 minutes per side.
  5. Let the steak rest for a few minutes before slicing.
  6. In a bowl, combine Greek yogurt, lime juice, and chopped cilantro to make the crema.
  7. Assemble the power bowl with a base of quinoa or rice, topped with roasted sweet potatoes, steak, avocado, cherry tomatoes, and red onion.
  8. Drizzle with the cilantro-lime crema before serving.

Notes

For best results, let the steak rest before slicing to keep it juicy.
