  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup strawberries, chopped
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Whisk together the flour, baking soda, and salt; gradually mix this into the wet ingredients until combined.
  5. Fold in the chopped strawberries.
  6. Scoop dough onto baking sheets lined with parchment paper.
  7. Mix cream cheese and powdered sugar in a separate bowl to make the filling.
  8. Press a small amount of the cheesecake filling into the center of each cookie dough ball, then cover with more dough.
  9. Bake for 12-15 minutes, or until the edges are lightly golden.
  10. Allow to cool before serving.
