Deliciously chewy Strawberry Oat Bars made with fresh strawberries, perfect for snacks or breakfast.

  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup fresh strawberries, chopped
  • 2 tablespoons lemon juice
  • 2 tablespoons cornstarch

Instructions

  1. Preheat the oven to 350°F (175°C) and grease your 9×9 inch baking pan.
  2. Mix together the rolled oats, flour, brown sugar, granulated sugar, melted butter, vanilla extract, and salt until crumbly.
  3. Press about two-thirds of the oat mixture into the bottom of the prepared pan.
  4. Mix the chopped strawberries with lemon juice and cornstarch until well-coated.
  5. Spread the strawberry mixture over the oat base.
  6. Sprinkle the remaining oat mixture on top of the strawberries.
  7. Bake for 25-30 minutes or until the top is golden brown.
  8. Allow to cool before slicing into bars.

Notes

Let the bars cool properly for better slicing. Use a sharp knife for cleaner cuts.
