  • 2 large sweet potatoes
  • 1 cup fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh herbs (like parsley or basil) for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the sweet potatoes and prick them with a fork.
  3. Bake in the preheated oven for about 45-60 minutes or until soft.
  4. Heat olive oil in a pan over medium heat.
  5. Add chopped spinach and cook until wilted.
  6. Combine the cooked spinach, ricotta cheese, Parmesan cheese, salt, and pepper in a bowl.
  7. Cut the baked sweet potatoes in half lengthwise and scoop out a bit of the insides.
  8. Fill each sweet potato half with the spinach and ricotta mixture.
