Delightful mini patties combining sweet potatoes and fresh apples, perfect for cozy gatherings or as a wholesome snack.

Ingredients

  • 1 cup sweet potatoes, cooked and mashed
  • 1 cup apples, peeled and grated
  • 1/2 cup oats
  • 1 egg (or flaxseed egg for vegan)
  • 1/2 teaspoon cinnamon
  • Salt to taste
  • Olive oil or cooking spray for frying

Instructions

  1. Combine the mashed sweet potatoes, grated apples, oats, egg (or flaxseed egg), cinnamon, and a pinch of salt in a large mixing bowl.
  2. Heat a non-stick skillet over medium heat and lightly grease it with olive oil or cooking spray.
  3. Scoop about 2 tablespoons of the mixture and form into a patty in your hands. Repeat until all mixture is used.
  4. Cook the patties in the skillet for 3-4 minutes on each side until golden brown and crispy.
  5. Remove the patties from the skillet and place them on a paper towel-lined plate to absorb excess oil.

Notes

These patties are great for meal prepping and can be stored in the fridge or freezer for later use. Adjust cooking methods to include baking or air frying for a healthier option.
