A hearty and satisfying breakfast featuring sweet potatoes topped with crispy bacon and eggs.

Ingredients

  • 12 Sweet Potatoes
  • 23 slices Bacon
  • 2 Eggs per sweet potato
  • Salt (to taste)
  • Pepper (to taste)
  • Olive oil or butter (for cooking)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Poke the sweet potatoes with a fork and place them on a baking sheet. Bake for about 45 minutes or until tender.
  3. Cook the bacon in a skillet until crispy, then crumble it.
  4. Fry the eggs in the same skillet.
  5. Slice the sweet potatoes open and lightly mash insides.
  6. Top each sweet potato with bacon pieces and a fried egg.
  7. Season with salt and pepper to taste and serve warm.
